How did I get here?

Wow.

I think I blinked... We're nearing the second week of 2019, you say? Hmm... Well... Angeline and I have been cranking away on our 'by moonsong' concept. Six pop ups in six months of 2018, navigating the ways of promotion/social media, and we have now landed our very first HOME - Conspiracy, Middletown - This place is great! As if a brick and mortar weren't good enough, sharing a space with a killer craft cocktail bar that has an ear for great music... count us in!

Now how the heck did we end up here? I myself was working a couple jobs. Number one was bread baking at Atticus in New Haven. If you haven't tried their bread yet, you're seriously missing out. This has to be one of the few dynamite bread bakeries you'll find anywhere in between here and San Francisco, no joke. Their head baker, Josh Kanter, is an absolute wizard. Supported along the way by owner Charlie Negaro, he's crafting insane sourdoughs and incorporating heavy doses of fresh milled (and often times local) wheat. As icing on the cake, he also has some bagel tricks up his sleeve. Definitely keep an ear peeled for more details soon regarding where you can get your hands on these. Job number two, delivery for Seacoast Mushrooms. Seacoast Mushrooms is an operation run by a man named Chris Pacheco. He's another wizard, producing nearly 1,000lbs of organic mushrooms A WEEK, singlehandedly or with some sporadic picking assistance from his two kids. I've been delivering maitake, shitake, lions mane, blue and gold oyster, and king trumpet mushrooms every Wednesday to a good chunk of CT, everywhere from Stonington, to Simsbury, to Westport. Another product you can't go too long without trying if you haven't already. The beauty and flavor of these fungal wonders is unparalleled anywhere. Period.

Meanwhile, Angeline is looking for part time work so that we can pay the bills as we progress towards our very first brick and mortar restaurant space. One day, she responds to an ad from a cocktail bar in Middletown, CT searching for cooks. She came to find out that they were having a hard time staffing the kitchen, however, they saw it as a good opportunity to transition their snack-centric menu into one more tailored to a dinner experience. So now here she is, standing in the middle of a space looking for a new menu, a new concept... TA DAAAA! Here we are.

They jumped on the idea almost immediately. Angeline, too. She wasted no time getting in there and slowly but surely ironing out all of the kinks in the present menu and setting us up for our projected opening of by moonsong,' ramen and food to drink to', starting January 2 of 2019. And here we stand. Night #3 in the books. We're unbelievably grateful to be in this position, serving up food we love, building a following, and honing our craft all the while.
